Kitchen Refurbishment at The Old Fleece Pub and Restaurant

First licensed in 1870, The Old Fleece is an 18th-century Pub and Restaurant nestled in the heart of the picturesque Five Valleys in Stroud. Taken over in 1993 by Nick Beardsley, The Old Fleece caters to between 1200 to 1400 covers each week. Renowned for its locally sourced menu and array of local ales and wines, The Old Fleece has remained a beloved culinary destination.

With three decades of successful management under Nicks’ ownership, a decision was made to embark on a full refurbishment programme to add more restaurant and bar space as the demand for dining kept growing and growing. During this journey, it became evident that the existing kitchen required upgrading, and the challenge was to find a solution that would enable uninterrupted operations while the old kitchen was being ripped out.

After searching online for a solution, PKL’s temporary kitchen facility was exactly what Nick was looking for.

PKL worked with Nick to design the temporary kitchen space to fit the menu they had on offer, but also in a way that if something on their menu wasn’t working, they could adapt it, which ensured there was no disruption to their catering operation. Working together from the get-go meant that the kitchen space was designed to meet their exact requirements, with the catering equipment carefully considered along with the layout of the kitchen.

Nick commented, “Because it was new to the chefs and they like routine, they were worried about everything. As soon as it was up and running, it just worked brilliantly for them, and in fact, they said that it worked better in the temporary facility than in the original kitchen”.

Nick went on to say, “The overall experience with PKL has been brilliant. We work with a lot of contractors and suppliers and would say that every element of working with PKL has been a joy. At every stage there have been no problems at all, and they are a great company to work with”.
