Bain marie hire questions

A bain marie is a commercial food warmer that holds already cooked food at a safe serving temperature. Gastronorm trays sit in a heated well and the heat reaches the food gently and evenly, so a sauce, a curry or a tray of vegetables can stand through a service without drying out, catching on the base or splitting.

The name is French and comes from cooking over a water bath, which is also why the trade writes the plural as bains marie. In a commercial kitchen the unit belongs at the service end rather than the cooking end. It is the last step before the plate, not part of the cooking.

The H24B hot cupboard takes three full size GN1/1 trays across its 1.2 metre top. The table top H24D takes one GN1/1, or three GN1/3 trays if you want three dishes in a smaller space. Both figures are on the model pages linked from the tiles above, along with the full dimensions.

Tray depth changes what those numbers mean in practice, because a 100 mm deep GN1/1 holds about two and a half times what a 40 mm one does. Busy carvery and buffet services often run two bains marie side by side rather than one larger unit, which gives a second heat zone and a spare if one is knocked out mid service.

Set it so that the food, not the water, sits at 63 degrees C or above. That is the hot holding standard in Food Standards Agency guidance under the Food Safety and Hygiene (England) Regulations 2013. In practice the control runs above that figure, because the well has to replace the heat the food loses.

Check with a probe in the thickest part of the food rather than trusting the dial, at the start of service and at intervals through it, and record what you find. Preheat before the first tray goes in. A cold well will pull a hot dish below the line within minutes, and you will not see it happen.

No. It holds food at temperature and is not built to raise it. Putting cold or partly cooked food in leaves it sitting at exactly the temperatures you are trying to avoid while it slowly warms through, which is the opposite of what the equipment is for. Cook or reheat properly first, then transfer.

The one thing a bain marie will do beyond holding is melt and hold gently, chocolate, butter, a glaze, which is where the domestic water bath idea comes from. Reheating is a different job and belongs on the hob, in the oven or in a combi, to whatever reheating temperature your own food safety management system specifies.

Both units in this range run from an ordinary 13 amp socket on a 240 volt single phase supply, so there is no three phase work and no electrical installation to arrange before one can be used. The table top H24D is rated at 1.5 kW. The specification for each is on its own model page.

The thing worth checking is what else is on the same circuit, because a service counter running a bain marie, a water boiler and a toaster off one ring is a nuisance trip waiting to happen. Position the unit so the lead reaches a socket without crossing a walkway or a doorway.

For as long as it stays at 63 degrees C or above, hot food can be held for the length of the service. Food Standards Agency guidance allows food below that temperature for a single period of up to two hours, after which it has to be reheated, chilled or thrown away, and cannot go back on display.

In practice quality runs out before the safety limit does. Sauces skin over, green vegetables lose colour and rice dries well inside two hours, which is why most operations batch small and refill rather than filling deep trays at the start of a long service. Keep the written record of your temperature checks, because that is the evidence an inspector asks to see.

The two bain maries in our hire range

The range on this page covers two formats, and the choice between them is nearly always about where the unit has to stand rather than what it has to hold. The H24B is a 1.2 metre bain marie hot cupboard, 1270 mm wide by 670 mm deep by 900 mm high, taking three full size GN1/1 trays, with heated storage in the cupboard beneath it and a digital temperature display on the front. It runs from an ordinary 13 amp socket on a 240 volt single phase supply.

The H24D is a table top unit for a counter or a serving trolley, 360 mm wide by 580 mm deep by 280 mm high. It takes one GN1/1 tray, or three GN1/3 trays if you would rather hold three separate dishes in a smaller footprint. It is rated at 1.5 kW with adjustable temperature control and uses the same 13 amp plug. Full specifications for both sit on each model’s own page, linked from the tiles above.

When catering teams hire a bain marie

Rental usually answers one of four situations. A service that only needs hot holding for part of the year, a hotel breakfast, a weekend carvery, a Christmas period, does not justify owning equipment that then sits idle. A one off, a conference, a wedding, an exhibition stand, an open day, needs the kit for days rather than years. A kitchen being refitted still has to serve food from wherever it has been moved to, and usually with less equipment than it had. And a unit that has failed halfway through a service has to be replaced today, not ordered. In each case the value of a rental is that the equipment arrives ready to use, is supported while it is with you, and then goes away again.

Hot holding rules a bain marie hire has to meet

A bain marie is a food safety control as much as a piece of serving equipment. The standard it has to meet is set out in Food Standards Agency guidance under the Food Safety and Hygiene (England) Regulations 2013: hot food has to be held at 63 degrees C or above. The figure that matters is the temperature of the food and not the temperature of the water in the well, so the check is made with a clean probe in the thickest part of the food, and it is written down.

Food goes into the unit already hot, having been cooked or reheated properly first, because a bain marie holds a temperature and does not raise one. Three habits do most of the work in keeping a service compliant: preheat the unit before the first tray goes in, keep lids on between servings, and never top up a cooled tray with fresh hot food. Batch small and refill instead.
